Cool Tabouli Salad
Tabouli is a traditional middle eastern salad made from bulgar wheat although quinoa may be used. This recipe includes cucumber and raisins to increase the cooling effect of the grain and herbs.
Mix together :
- 2 cups bulgar wheat or quinoa
- 1 cup fresh chopped parsley
- ½ cup chopped mint leaves
- ½ cup chopped cucumber
- ¼ cup raisins
For the dressing, combine in a cup and stir well.
- ¼ cup oil
- 2 tablespoons fresh lemon juice
To serve: Put the salad over a mixture of fresh lettuce and pour over the dressing.
Asparagus and goats cheese salad
Blanch the asparagus in boiling salted water for 1 minute, then drain. Layer a tray with cherry tomatoes and mangetout. Lay the asparagus on the top of the mangetout, sprinkle with walnuts, goats cheese and chives. Pour the dressing over.
- 4 bunches of asparagus , trimmed
- Cool oil—from Groovy Foods
- Mange tout
- Tomatoes
- Chopped walnuts
- 100g goat’s cheese , crumbled
- a small bunch of chives , snipped into short lengths
Tzatziki
- 1 250g pot of natural greek yoghurt or soya yoghurt
- 1/2 cup Chopped mint
- 1 cup Chopped Cucumber
- Crushed garlic to taste
Mix all ingredients together and chill before serving.
Avocado and Cashew Nut Pate
- 1 ripe medium avocado
- 1 tbs lemon juice
- 2 oz cashew nuts
- 1-2 spring onions
- 1 tbs fresh parsley
- 4 black olives (optional)
- 2 hardboiled eggs
- black pepper (optional)
- Mash the avocado and lemon juice with a fork.
- Toast the cashew nuts, finely grind and allow to cool.
- Finely chop the spring onion, parsley olives and hard boiled eggs.
- Mix all ingredients together.

They are extremely beneficial to add into the diet and have been a staple source of protein and vitamins and minerals for many cultures throughout time. They are really like a little allotment on your windowsill, easy to grow, take only a few days to be ready to eat and highly nutritious.

Cover fresh strawberries in plain soya yoghurt and drizzle with agave syrup for a delicious. Low GI healthy summer dessert.
